Everyone enjoys a good holiday potluck, and bringing the “it” dish is always the goal, you know, the one everyone dishes over? We are sharing with you a traditional treat with a boozy twist, so enjoy and be the sweet ending to the party!
Chocolate Bourbon Pecan Pie
9″ pie shell
1 cup white sugar
1 cup light corn syrup
1/2 cup butter
4 eggs, beaten
1/4 cup bourbon (the fun part)
1 tsp vanilla extract
1/4 tsp salt
6 ounces semi-sweet chocolate chips
1 cup chopped pecans
Caramel Sauce
1 packed cup brown sugar
1/2 cup half-and-half
4 Tbl butter
Pinch of salt
1 Tbl vanilla extract
Preheat oven to 325°F. In a small saucepan, combine sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until butter melts and sugar dissolves. Cool slightly. In a large bowl, mix eggs, bourbon, vanilla, and salt. Slowly whisk in the sugar mixture. Stir in chocolate chips and pecans, then pour into pie shell. Bake for 50 to 55 minutes, until set and golden.
Sauce: mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and drizzle over the cooked pie. Pour the remaining sauce into a jar and refrigerate.
